Pumpkin Cookies



1 C. sugar
1 15 oz. can 100% real pumpkin
1/2 C. applesauce
1/2 tsp. vanilla extract
1 C. all purpose flour
1 C. whole wheat flour (you can use 1 C. of all purpose if you do not have whole wheat)
1 T. baking powder
1 tsp. salt 

In a bowl combine the sugar, pumpkin, applesauce and vanilla. Add in the flour, baking powder and salt. Stir to combine well. Drop by spoonful's onto a cookie sheet (lightly sprayed with cooking spray) and bake at 350 degrees for 14-16 minutes. Remove to a cooling rack. Makes approx. 30-32 cookies.
