1 2-3lb beef roast
1 jar beef gravy
1 pkg. onion soup mix
1 can cream of mushroom soup
1 C. water
4 carrots, peeled and sliced in 2" slices
1 pkg. large button mushrooms, cleaned with a damp paper towel
1 T. oil
salt and pepper
Heat the oil in a large skillet, salt and pepper the roast really well and sear on all sides in the hot pan. Place the carrots and the mushrooms in the bottom of the crock pot. Place the seared meat on top of that. Combine the gravy, soup mix, mushroom soup and water and pour over the roast. Cover and cook on low for 7 hours.
